Buck & Birch Wilderness Liqueurs Drinks Feature
Buck & Birch, founded by Tom Chisholm and Rupert Waites, has just released a selection of Wilderness Liqueurs: Aelder, Amarosa and Ana. Philip Day provides a brief overview of other of these latest creations.
Buck & Birch has released a unique collection of award-winning liqueurs that owe their crafted flavours to naturally foraged berries, botanicals and ingredients from Scotland’s flora and woodland habitats. Called ‘Aelder’, ‘Amarosa’ and ‘Ana’, each of these liqueurs is deliciously different, bursting with rich and intense flavours – each in turn skilfully crafted to encapsulate the incredibly flavoursome taste sensation that nature has perfected.
Each of these three liqueurs will also be the most versatile spirit additions to any drinks cabinet: whether used as an after-dinner digestif – sipping, neat or on the rocks; or as refreshing spritzes with the addition of sparkling wine or soda. They are also ideal for mixing into all kinds of cocktails, party punches and winter warmers.

Aelder Wild Spiced Elderberry Liqueur
‘Aelder’ is the original Buck & Birch liqueur, created in 2016. This phenomenal fruit has been gathered and used used millennia as food, medicine and more, harvested from the Elder Tree. The elderberries used in the liqueur pack a flavour punch, exhibiting the same intense fruitiness as blackberries but with delicious undertones of dark chocolate and a subtle earthiness.
Each 50cl bottle of ‘Aelder’ spirit has packed in an incredible 3,500 of these little super-berries.
Amarosa Wild Scottish Spritz Liqueur
When we think of a spritz drink, the Italians have Aperol, the English Pimms, and now finally, Scotland has a spritz it can call its own: ‘Amarosa’. The small scarlet fruit of the wild dog rose bush – the rose hip – has mainly been foraged in order to be used to make sweetly tart homemade syrups and jellies.
Now the humble rose hip is the hero of ‘Amarosa’ to create a complex, perfectly balanced and wildly refreshing liqueur.
Ana Birch Syrup Caramel Liqueur
This liqueur showcases the beauty of pure Scottish birch sap, hand-harvested each spring and inspires the name (together with the name Ana, the Earth goddess of spring) of this liqueur.
This fantastically magical natural ingredient is reduced to a syrup before being blended with sumptuous caramel made with rich Scottish cream and butter. After being seasoned with a premium spirit, this gorgeous mix is then triple-filtered to create the smooth, sweet and vibrant ‘Anna Birch Syrup Caramel Liqueur’.
