Buck & Birch – a taste of the wild

Founded in 2016 by Scottish entrepreneurs Tom Chisholm and Rupert Waites, Buck & Birch is a Scottish based team of nature lovers, foragers and flavour innovators, whose aim is to create exceptional new spirits incorporating the incredible ingredients that nature has to offer. Defying most of the drinks industry norms and being led only by a spirit of exploration, many of the products take their inspiration from walks through Scotland’s woods and forests and these guys’ love of the flavourful saps, plants, barks and berries that lie within: truly celebrating the wonders of the wild.

Birch Premium Botanical Vodka is one of the new wave of sap-based spirits that is growing in popularity. The headline ingredient in Birch Premium is Scottish birch sap – a luxuriously light and silky natural ingredient, which originates from the birch trees grown in one of the community forests in Scotland that Buck & Birch collaborate with.

The birch sap is harvested annually, each spring and is then mingled with pure spirit, then finely infused with complex extracts of birch botanicals, which bestow a delicate yet distinctive botanical flavour to the vodka.

To further add a touch of woodland seasoning, a preserved Birch twig is added to each bottle.

Birch Vodka is smooth, delicious and unlike anything else on the market.

Buck & Birch, in their tasting notes describe Birch Vodka as ‘Refreshing as a vibrant spring forest. Subtly sweet notes with hints of green apple, fennel and wood spice. Soft, silky and smooth to taste, with a long, warm finish.’

Birch Forest Martini

You could also try it in a Birch Forest Martini, suggested by the team at

Buck & Birch, where 100 ml of Birch Vodka and 20 ml of vermouth are stirred and added with ice cubes into a shaker, then finally strained into a Martini glass.
